Because I really am just that much of a follower…

Just kidding. It just kind of makes sense to post it on a Monday, if your work, home and lifestyle dictate that your week ‘starts’ on Monday. 🙂

I try to meal plan, not so much for health but for sanity, organization and frugality. As our family’s CFO in charge of food acquisitions and strategic usage (among other things), I find that adequte planning is half the battle. Motivation to follow the plan is the other half (the one that often alludes me).

Grown here at home, most of this is now in the freezer and being used to feed the crew 🙂

And, this year, I really want to all but eradicate fast food and eating out from our family’s budget, so home cooking is likely the only way I’ll be able to quiet the whimpers from my smalls that they’re “starving, ” soooooo hongry,” and “just don’t have enough food” *smirk, cue violins* My smalls are hilarious and I love the melodrama of the under seven-set. 😉

So, this week, my band of merry men (and baby girl) will be dining on:

Monday – Salsafied Chicken and Homemade Gluten-free Cherry Cheesecake

Tuesday – Gluten-Free Shrimp Alfredo and broccoli

Wednesday – Gourmet (oh la la!) Meatloaf and Garlic Mashed Potatoes and butternut squash

Thursday –  Chicken Enchilada Chili, Tortilla chips and Salsa

Friday – Corned Beef Cakes with oven fries (possibly the sweet potato variety)

Saturday – Ribs, Potato Salad, Coleslaw, Peas and Corn

Sunday – Beef stew with a side of rice

So far, we’re off to a smashing start – salsafied chicken is done and the cheesecake is cooling, awaiting it’s sweet and tart cheery topping.
